Alright fackers gimme your WINGS recipes

I usually get a couple packs of large wings, cut off the tips, batter in House of Autry and fry. Meanwhile I get a saucepan going with a bottle of Louisiana hot sauce and stick of butter. Once the wings are done, drain them and then submerge individually in the sauce mixture and then use Tabasco to heat to taste.

How do you do it? Is there a better way that I'm missing?

I debated just getting them from one of the local pubs but that's not as much fun, plus I've waited til the last minute now so it'll be hard to get a big order done I think.

my simple wing recipe:

boil wings
fridge for 30+ mins
lightly dust (egg-wash + seasoned flour)
flash fry until golden brown

toss in sauce very lightly
serve with more hot sauce on side

simple sauce:
melt butter
add franks red hot
maybe a little mustard

also grilled wings do seem generally underrated, they get pretty nice on the grill with a bit of char

What is the advantage of boiling here? I have another friend who swears by it but he can't really articulate why it's better than just straight up frying

in case you need more heat or more sauce.

I generally like my wings lightly dusted and sauced, so the option to dip is always a good move.

I like grilling but as with baking it seems that the sauce doesn't stick as well as with fried. If I could thicken the sauce up somehow I think that would help, thick bbq sauce does just fine on the grill for example.

this way the wings are already cooked all the way way through and all you have to do in the fryer is just get the outside nice and crispy.

Also, added benefit of the wings being less greasy and more crispy if you throw them in a super hot fryer. Also important to dry your wings off (remove moisture) in the fridge beforehand -- which leads to more crispiness.
