Emile Griffith was long thought of as gay or bisexual and faced anti-gay slurs during his career. His pummeling of Benny Paret was motivated by a homophobic slur directed at him by Paret. That was back in the early 60s.
He did eventually come out in a more formal manner but that was after he retired.
Orlando Cruz became the first boxing champion to come out as gay while fighting.
As for MMA, I can't think of any men but Amanda Nunes is a lesbian.

How a fight is broadcasted can frame the audience's perception. I remember watching Adrien Broner/Jessie Vargas with foreign language broadcasting and my score of the fight was way more in Vargas's favor than in Broner's. I was shocked that judges thought Broner won.
