I am aware of some sites that extract text from image, however poker starting hands charts usually define the ranges by coloring the cells according to the action. Is there any software able to extract the text like this, namely grouping them according to the color of their cells?

Not sure about the color, seems like that wouldn't be hard to do. For extracting text can use this I think.
