Most of these are gx.ini changes you need to make, some are graphics you will need to delete/replace.

(1) Is a gx setting, at the very bottom you have a total_pot section, edit the bg_color variable using a
hexadecimal colour.

(2) Is an image file for when the action is on that player, the name of which varies on the theme but usually this is statusbold, statusb, seatbold or seatb.
You can replace these with an image of your choice (i.e. a gray image) or rename a blank file so the client does not render an image.

Check you the fonts section of the gx.ini for that theme. The listed fonts correspond to the files in ../pokerstars/gx/fonts/
I did have a working ini file that had comments by each line to say which variable controlled which setting client-side. Seems I no longer have this
Perhaps someone can chip in and let you know which variable you need to target otherwise it will be a matter of trial and error.

Gx file again.
Each table type has it's own layout settings.
These are the sections such as [10x2] which denotes 10 seat table, 2 hole cards.
You will want to edit [9x2] for the table in your picture - and those for any other game you would like to customise.
[seat] lists the co-ordinates of the centre of the seat pod, co-ordinates start 0,0 at the top left of the player-table.
you will then need to move all of the other elements so that they correctly align to your new seat arrangements. i.e. the dealer chip, player cards, name, stack size all need to move with your new seat locations.
*To edit the gx file: get a hold of table crab from google code and use that to edit the gx file for the theme you are using.
Personally if you're going to spend any decent amount of time editing..I would use something like Sublime Text (Free to try, Win/Linux/Os X) or notepad plus plus (free) and load up some syntax highlighting.
