Also, note that Sessions reluctantly recusing himself led to this. Watch his statement on recusal, it appears he was talked into it even though he disagreed. He said he would recuse himself from anything concerning Russia and the campaign. It just so happens that the AG appoints special counsel, unless he is recused. Here, the SCs job was legalistically defined as involving Russia and the campaign, but it's likely much broader, so Sessions got lawyered by Rosenstine, who proceeds to appoint Comey's bff. This is how you play chess vs an opponent who is making mud pies.
Finally, it must have taken at least 3 days to appoint Muller, who resigned from his very lucrative gig from a major firm, with a few other partners, leaving plenty of current matters that the firm was handling because of him. I'd think that exit would take some time to arrange.

Eh, three days is possible. If you're called upon to conduct one of the most important criminal investigations/prosecutions in American History, and up until then you've mostly been a lifetime prosecutor, you can get you stuff wrapped up in 3 days. I'm sure his other partners and current clients and any judges they had matters in front of were more than understanding.
