Using a VPN for US bookies

Hi! My wife is american and we live in Europe and I recently got into matched betting so I'm thinking about opening bookies accounts in her name (bookies that allow US citizens and are not available in EU for the most part ). Can I do this from EU using a VPN as long as she can verify her US residence/address (bank statements with her parents' address) ? Can I open the account and bet from EU, would the bookies even mind knowing that offering services to US citizens isn't exactly legal in the first place? I guess we would be using WU or MG (online versions) since banks are iffy about this, would that work from EU? Thanks!
