Math for sports betting/bookmaking

Hi guys,
Me and a friend seem to vaguely recall a certain kind of math that apparently is really important for bookmaking and some people go to school to study it, but we can't remember what it's called. Do you guys know of something that sounds like that and the name for it?

Probability and statistics would be the most common fields of study. Combinatorics is a wider field in math that covers many ideas including groupings and outcomes. More gambling-specific terms are Dutch book, fixed-odds betting, overround/vigorish. The topics are more common in Europe and Australia than in North America.
