steak definately has to be cooked on med-high temp 2-3 min each side to sear and keep the juice in. Let it rest couple minutes and it's ready.

the idea is that cooking it on a lower heat initially will allow the meat to cook more evenly throughout so that it doesn't get get overcooked on the outside and you get a gray band and be the right temperature on the inside. resting it for the 5 minutes before searing lets the juices redistribute so it's pretty much ready to eat once done with the sear. 45 secs/side isn't enough heat/time to cook too much of the meat other than the outside, avoiding uneven cooking.

I'll give this a try. Your steak came out amazing looking! Do you use the salt method before cooking/season at all?

Also, just got hired at a company who makes all kinds of lenses. I'll be maintaining their website and creating a new catalog for them. I'm not super experienced with InDesign but I guess this is a good time to learn.

Anything more than salt/pepper on a steak takes away from the natural flavor imo.

I'm going to Australia and New Zealand for about 3 weeks, next Thursday. Should be a hoot. Highlights are Sydney, Melbourne, Waiheke Island, and this. The hiking is probably what I'm looking forward too most on the trip.

Beyond that, thick steak cook it at a high temp to get a decent crust and make sure it is evenly cooked throughout. Salt, pepper, and montreal steak seasoning.

Yes, vacation. After working where I work for 5 years, they give you a roughly ~5-6k of travel funds for a 4 week vacation, and you also get paid for the month you're gone. It's really nice. It's also winter here in Wisconsin, which finally decided to show up. I've certainly earned it, but it's a nice perk.

Man, med school app process is not going well. Looks like nothing is going to happen this year. I decided to take an orgo 2 lab in order to fulfill a requirement of some schools, but I have to take the full lecture with it as well. What's really annoying is listening to these two idiotic women talk about the interviews they got. They're going to a joke of a school (essentially a community college) getting a joke of a degree and scored 4 points lower than my MCAT but they're getting in.

So ****ing lame.

took me 4 1/2 hours to drive what usually takes 45 mins. today.

My wife is doing much better, we think we got something that's finally helped her problems with migraines - botox. It's weird, but it works. She's gone from 1-2 migraines per day to 1-2 small ones per week and she's still getting better.

She's working with some crazy kids right now (like two soon to be sociopaths who have done stuff like attempted rape and severe beating of family members at age 12) and is applying for her last practicum site. Her thesis, music with deaf kids, is going along well.

Waiting a year to get in wouldn't be too terrible. It would mean that we wouldn't be in school at the same time. It's just frustrating right now. I still have an outside shot at this point, but I haven't even gotten an interview yet.
