From personal experience I would say the main differences I've seen between online and live (both "low stakes") are:
1. Live is considered very short even 5 handed, and the floor will often give reduced rake when starting games like that. Pretty common to have a full table (9 near me).
2. People play very bad wide ranges pre. ... don't be shocked when your raise is called in 5 spots.
3. Buyins and stack sizes will be much bigger. Like buying in for 500bb is somewhat common. Combining with #2 means pots will be a lot bigger too, like get ready for 100bb+ pots on the flop 4+ ways. Was recently at a game where the big winner had over 6,000bb (no, that's not a typo).
4. More general live casino stuff: Almost everyone is 10x worse; Straddles; People walking in from a big win/loss at the blackjack table wanting to gamble; Visibly drunk people sitting down; Worst player at the table will be berating everyone for winning (there's no mute button live); People sitting down obviously only having played NLHE.
Ranges should be altered a decent amount because of the above, esp. pre. and flop. I'm not sure if the variance is higher, mainly because I think the win rates are significantly higher ... saying that I've seen people say similar things about live NLHE, compared on online (I can't win or I can't play because XYZ).
