Eg, you have perfection information on the EV of your hand. Outside of the river, you don't know which cards will come. So where's the limit? 55%? 65%? Of course the timing of the tournament (particulalrly in STT's) matter, but I'm asking in a general sense?

In a SNG, your concern is your tournament equity. There isn't a "general answer" because it's specific to the situation in the tournament. The minimum EV that you're looking to have when your deep-stacked in the first few levels is
completely different than the EV that you're looking for when you're short-stacked on the bubble.
