Tried to make a Japanese convenience store style egg salad sandwich but it was ruined by the bread. Used Dave's Killer White Bread but killer it was not. Should have named it weak ass multigrain.

please expand on what constitutes Japanese convenience store egg salad. i love making egg salad and looking to expand my horizons.

i've never really been a fan of Dave's bread. you made me go look and here are some of the ingredients in their 'white' bread.

the whole idea with white bread is that it isn't whole wheat (the bran and germ are removed). lol is has two kinds of whole wheat in it. the rest of those ingredients read like what you get after sweeping the floor after making all the other kinds of bread.

Hey redeyes, its just a bit sweeter and smoother. The mixture is mayo (kewpie), salt, a touch of condensed milk, a touch of mustard. I also separate the egg yolk from the white and mash the yolks with the liquids before adding the whites back in.

Also, I was so disappointed with the bread that I skipped the extra step of doing a 7 and a half minute boiled egg for presentation.

interesting! understandable why you would bail on the boiled egg after seeing what you were working with in the bread department. is that a green onion or something similar in your inspiration pic?

on a somewhat related note, there's a small place near where i work that serves what they call an italian egg sandwich. sliced soft/ almost hard boiled egg (guessing 8+ minutes?), tomato, spinach, and aioli on a great sourdough roll.
