Honestly I have no idea. "Raw" is probably a marketing gimmick. I have never had crispy kraut like that before though, and it was really good.

It's raw kraut. And that's why it taste so crispy because it is fresh. Usually sauerkraut is prepared by fermenting and cooking (some cook it fir hours so it gets really soft) In a hotdog they usually use cooked sauerkraut. great sandwich!

Most packaged kraut you buy is pasteurized to kill the lactic acid bacteria and stop fermentation. That container has probably just been kept refrigerated, so the LAB are still alive but are pretty inactive. In that case “raw” might not be 100% correct, but it’s still a notably different product than most mass-produced krauts.

In most hotdogs sauerkraut is only fermented I believe.
Relish might be cooked obv.

Full disclosure: did not make the potato salad. Bought from the grocery store deli. It was pretty good, one of the best store-bought ones I've had.

Tomato, chives, and basil were home grown in the backyard though!

UPDATE:

They only had SABRETT long hot dogs so I pivoted to the Oscar Meyer Angus Beef Franks. I had a good feeling about them so I grabbed two of 'em.

I have to say these are DELISH franks and I have been enjoying them with Heinz Spicy Brown Mustard!

Got a real hearty loaf of sourdough from a local bakery and used them to make these. They were hearty enough I am trying to count them as open face sandwiches, when in fact they could be called toast.

2- Hummus, avocado, pepper, and olive oil
1- Greek yogurt and dried mint
