I've been making omelettes lately. Never realized it was so easy until my gf showed me. Makes for a good meal. I like mine with sausage, ham, bacon, onion, cheese, and green pepper.

I'll try to remember to post a pic next time I make one.

That’s a great looking omelet. In the LV casual dining thread the Reuben omelet and pimento cheese omelets came up for discussion from the secret menu at local Vegas diner, Lou’s. I’d like to try both.

it was good where it was just a hint of reuben rather than trying to wholly replicate it

I had a Breakfast burrito (eggs, potatos, queso and salchicha) from Robertos Tacos the other day. proper food truck food from a sit down establishment, and it was delicious with verde sauce.

I used a small (10 inch, I think) skillet. Spray with non-stick cooking spray. I cracked 2 eggs, and added a little milk. Mixed it all up really well. Poured the mixture into the skillet and cooked on medium (or just under) heat. Once the eggs were mostly firm, I flipped the mixture. After it's flipped, put your omelette fillings on one half, including cheese which will bind it. Lift the non topped half onto the topped half, cook a little until the cheese is melted and the toppings are warm, and serve.

Add seasonings to to the mixture before cooking to taste, or use salt and pepper once cooked if desired.
