Re: cream cheese on eggs, I do a lot of lox eggs onions scrambled with potatoes mushrooms and peppers, and then I'll throw in a healthy dollop of jalapeno cream cheese into the mix. It melts into the concoction pretty quickly and is delicious. Sometimes I'll switch out the potatoes for quinoa which works really well with the cream cheese, makes it almost like fatty, creamy grits.

A guy I randomly follow on twitter cooks a lot of eggs and ~ always does them in his cast iron. Figured I'd give it a try for fun, just a couple eggs with a sliced jalapeno cooked in a little bacon grease. Turned out really well, perfect over easy.
