Going to disagree or so I've been told, fresh eggs are harder to peel because whatever the membrane is called that attaches the whites to the shell is the strongest, but breaks down over time. Hence, a month old egg will peel much easier when boiled.

I get mine from my buddy so they are only a few days old at most. Pretty sure the farm fresh eggs you buy in a grocery store are already 2 plus weeks old by the time they hit the store shelves.

Also was told that you add baking soda to the water because it helps keep the eggs from cracking during the boiling process. But doesn't necessarily make them easier to peel.

Maybe old wives tales or in my case old grandma tales.

Quick! Without cheating what it's the easiest way to tell of an egg is still fresh enough to eat? You might be surprised how long they last and it's well beyond the expiration date on the carton.

Not much to see here. Just your standard jalapeno and cheese omelet. Except that i sauteed the jalapeno slices in butter beforehand and added the infused butter to the eggs before whisking. Gives the whole omelet jalapeno flavor.

This is my understanding as well. Cook with fresh eggs, boil them when old.

Whatever the science is, it works. A little baking soda and the cold shock after boiling really does the trick for peeling, in my experience.

Put the egg in a glass of water.

- If it rests on the bottom, the egg is good.

- If it stands on end, it's good but will go bad soon.

- If that sucker floats, throw it out.

As much as I like pickled eggs--a habit acquired during a misspent youth hanging out at cheap beer joints--pickled carrots are the nuts.

The contents of that jar wouldn't last two days at my house. And a mysterious depletion of my beer fridge would occur simultaneously.

FTR that is Momofuku Pickle Brine, which I have tried a few times, but find a little too sweet.

I have to agree, anything pickled is delicious. Eggs, onions, beets, garlic, cabbage, carrots, GINGER, cucumbers obviously, aaaaaaaaaaaa!



Nothing sweet, tho. Give me that tangy stuff.

I can find thousands of ways to use bacon that aren't breakfast-centric. Breakfast sausage I can def live without.

Sure, waffles with fruit is great. That's the exception to my rule.

Wife is horrified. See you boys in three days! Probably gonna add some jalapeno, serrano & habanero after I go to store, since I will be eating all of them.

I would try Momofuku Pickle Brine with some carrots, cukes, jalapeno. This recipe is on the sweet side, but if you want it more on the sour side I would maybe substitute white vinegar for the rice vinegar.
