I thought how to bill an egg was settled. Kanji did a whole study for the NYT. It’s a slight pain adding eggs to boiling water but does make being so much more easy.

Speaking of pains, I use the method from Kenji's book which involves the use of ice cubes and keeping the water at a subsimmer (iirc). Peel under cool running water.

Have had perfect results every time I've used it and the peeling has been easy, even with relatively fresh eggs.

FTR I did Kenji's method and it sucked ass and made all of the eggs unpeelable. It was ridiculous how bad they were, across multiple dozens.
IIRC it was something like put eggs in cold water, bring to a boil, then turn off and let sit for 5 minutes or something like that. Sucked.

Fwiw the Kenji method on serious eats is different than what’s in his book.

That guy in the video i posted drops the egg into ice water after boiling it. Has anybody tried that method for easy peeling or salt it is?

I personally just take the boiling pot and start filling it with cold water and then leave the eggs in it for a few minutes. Sometime change out the water once again if it gets warm enough again from the eggs.

The egg (perfect over-medium) is really a supporting character here. The potatoes, hashed browned from last night's pork roast, with cheese and bacon bits, with yesterday's sausage gravy, were the real star.

I've been staying with MtBrother1 for a couple of weeks. He knows his way around an egg, among other things. More perfect over-mediums, atop leftover biscuit squares, griddled in butter. Simple yet delicious.

More Mt eggs, Echo Lake Cafe style. The eggs were perfect OM, but the standout was the sausage patty. Crisp on the outside, perfectly cooked.

Potatoes were disappointing, EM was perfectly acceptable.

Heading south towards home. The Creamery in Beaver (hurhur) Utah does an alright sammich.

Sausage, fluffy scrambled, soft ciabatta bun. Tasty, but kinda bland? Def had to add salt/pepper to make it taste like something. 100% would stop here again, though.

A solid dose of Chulula would do wonders.
