Last day of vacation, which means use everything leftover. Octopus, shrimp, and bacon eggs. Not sure these should be labeled as eggs.

Just paid $7 for a dozen. Is this normal? Don't usually check the prices, but the choices were super limited at a LV Albertsons.

I'm sure it's partly regional...but here in Kansas City I insist (to the aggravation of my roommate) on buying the kindest, pasture-raised, with space to roam outdoors and peck around and eat bugs and be chickens, and probably twice daily massages for all I know, and I still pay 5.99/dozen or less.

When there's a good sale, I generally pay 3.49/dozen.

two bucks for an organic free-range four egg omelette is what i'm used to paying, but i also pay an upcharge for convenience shopping.

Lightly cracking it, then putting it in water has always worked for me. The water gets inside between the white and the shell.

Boil water.
Add salt.
Lower eggs into water with a big spoon.
13 minutes.
Remove and shock.
Fin. Perfectly boiled peeled eggs every time.

I throw mine in a Tupperware like vessel with cold water, close it tight, then shake them around vigorously…shells they come off quite easily after that.

i shock them in the pan i cook them in and shake around until the shell is covered in cracks

used to cook them this way because that's how mom did it
now i put the eggs in the pan with the water
add salt
bring to a boil then turn down 'til barely moving
10 minutes for the perfect deviled egg yolk, a few less and they're softer
shock, shake, and peel under water

*edit: we had this same conversation starting around post #100 or so.
