i'm trying to find a way to convince myself the minced garlic in the brohurt eggs isn't overcooked and bitter as hell. garlic really doesn't like high heat.

Tomatoes and eggs are amazing. Ordered it in yesterday. Asians just do it right.

Kenjis eggs are also amazing - use bacon fat instead though. Even just butter is infinitely better than oil.

I've been making a meal recently of Italian sausage, eggs, tomato sauce, mozzarella, quinoa, with some carmelized onions, mushrooms, and spinach thrown in for good measure. Amazing meal. Tomato + eggs is the bomb.

if you like the tomato + eggs, try using it as a pasta sauce on some pretty chunky noodles, dabble in some vinegar and hot sauce to taste

you guys ever listen to late night radio with George Nory? He sometimes has an 85 year old doctor on there who swears by eating eggs as the pathway to a good life. He is always bragging that he can keep it up at his age and that eating eggs doesn't increase cholestoral , but that eating sugar and refined grains and wheat is the path to bad health. I wish I knew his name.

From a little googling:

I found this doctor who was on his show, 81 years old. Joel Wallach.

thanks. his ideas always made sense. i read a book 19 years ago about a doctor who said that acidic blood from too much sugar and refined grains causes heart disease and cancer. he said cancer can't exist in non acidic blood. he said the acidic blood from too much sugar and refined grains would damage veins and arteries and that it would get patched up with cholestorol created from your own body and that that was the leading cause of heart disease. It wasn't from eating food with too much cholestrol.

Eggs are a good natural source of Vit.D, which is needed to absorb calcium -> lowers acidity.

Salt seems to the actual big culprit when it comes to acidity.
Quote:
The primary sources of acidity in the diet are sulfur-containing amino acids, salt, and phosphoric acid in soft drinks (For a more complete discussion of the adverse effects of phosphates, see Lara Pizzorno’s article in IMCJ 13.6).3 You will likely immediately scoff that salt is neutral in pH and is not metabolized to anything that is acid—and you would be right. Nonetheless, research has clearly shown that—happily reversibly—NaCl accounts for 50% of the net acidity of the average American diet.4 The mechanism is not definitively known, it is currently thought to be impairment of the kidney’s ability to excrete acid compounds. Figure 1 shows the sources of salt in the typical Western diet. If you look closely, you will see that wheat products are the primary source of salt—which may account for the common belief that wheat products are acid forming (wheat itself is only slightly acid forming).

Interesting. But either way it goes against todays common understanding.

Those look like my breakfast over a campfire on my first Boy Scout camping trip. At least the part that we didn't slosh out of the skillet into the fire.

Cooked over heaping piles of pine straw, some of which found its way into the skillet, due to our limited fire building techniques. I can still remember that taste.

Really the perfect amount of crisp and on those hash, eggs over easy and toast. Simple but really well executed. Even like the kielbasa looking sausage vs. your standard breakfast links.

there are really only two true tests with that Mabel's pic.
the first is fork to yolk. it's pretty much obvious from the pic that Mabel passes this test. if those yolks don't run i don't know what's real anymore.
the second is the inside of the hashbrowns. lots of great color on the outside, but i've had similar looking hash that turns out to be not so great if not raw in the middle.
my Mabel fantasy mind right now believes it's more of the same golden crust in the middle, therefore i choose Mabel to cook me breakfast every day in the afterlife.
