It's not traditionally done with bell peppers (at least by our housekeeper) but I really like chille rellenos and think they would be pretty good with bell peppers.

For lazy people, like myself, who don't want to make anything, I've found that a well received appetizer is a vegetable tray. Go to the store, spend $5 or $6 and be done with it.

Around Thanksgiving I found this jalapeno popper dip online and made it for that and five parties since. Super easy; huge hit.

Some modifications:
-- I only bake the bacon for about 10 minutes, so it's soft and I pour the fat from the pan into the dip. How the entire dip is based gets the bacon more cooked anyway.
-- I don't completely de-seed the jalapenos; and I do use six.
-- I add about a tablespoon of light mayo because I use the 1/3-less fat cream cheese and lowfat sour cream.
-- Instead of regular Ritz, I use the Garlic Butter Ritz.
-- I live in Chicago, so transporting it in the cold when it's best served warm was a challenge for which I always planned ahead, avoiding a microwave. I'd bake it for 15-20 minutes, just enough for the cheese to soften and blend. On the way to a party, I'd ask the host to pre-heat their over at 375 and stick it back in there for about 10-15 to crisp the top better and get the right serving temp.

something i like to do thats super easy (literally like 5 min prep time) is to buy some italian sausages and some of those big ghetto cans of generic grocery store tomato sauce.

take my crock pot, line the sausages on the bottom, cover them with the sauce, then cook for like 8 hours on low. right before i serve them i usually take them out and cut each sausage into like 4-5 pieces for easier consumption.

also you can add spices to the sauce since it starts out very plain, but you really dont have to as the sausage cooking in it for 8 hours imparts a lot of flavor.

If you're going for quick prep, I'd probably add a couple minced garlic cloves and a tsp of dried basil and oregano from the pantry. Some sea salt at the end before serving.

This one has slayed parties across the land: Goat Cheese w/ Bell Pepper Dressing on Sourdough





Cut up some sourdough into bite-sized pieces and place around on a platter. I personally skip the pine nuts, don't want to inadvertently kill anyone.

Crock pot kielbasa

- 3 pounds kielbasa sliced into 1/4" thick pieces
- 1 jar grape jelly
- 1 bottle chili sauce

Cook for 2 or 3 hours on high.

Sounds bizarre but it's really good and easy to make.

Simple but tasty baked, skinless, marinated chicken wings. Longest part is the skinning of the wings and separating the mini-drums from the mid-section. Once ready, marinade for 6 to 24 hours in the fridge, flipping and spooning the sauce over the wings a few times while soaking. Bake on a sheet pan 'til done.
Usually a hit with the women since they're skinless and lower cal than full on breaded, skin cloaked wings.
My preference is a decent jerk marinade.
