Lots of all grain brewers start with purified water and then adjust with brewing salts to the profile and mash pH they're looking for.

I use a very clean spring water and adjust accordingly. Typically, I add salts to target the proper mash pH first, then if necessary, I add more salts to the brew kettle to hit the finished profile I want for the style of beer I'm brewing. Just beware that a lot of brewers overdue salt additions, so tread lightly until you figure out what you're doing.

I am not usually an IPA guy, but I tried this Tasman Red small batch stuff from Samuel Adams and I was pretty impressed. Color is nice deep red, good balance.

Newcastle is what I regularly order, but I also like Boulevard:


They make a great wheat beer, similar to a Blue Moon, but better imo. I also like their pale ale alot. Out of Kansas City, Missouri, you won't find this beer much outside the midwest, but it is growing.

Had Founders CBS today on tap - bar was serving both 2010 and 2011 batches. Holy **** - this might be my favorite beer. Too bad it is so hard to get in PA - I may never see it again.

Had some Lancaster Amish Ale today which was good, pretty mild for a pale ale, not too hoppy (I like hoppy) but overall good.

Tonight, I will be drinking Goose Island Matilda and the Vertical Epic mentioned earlier.

Yeah he should probably ignore the fact that they are a couple of his favorites merely because those Shiner beers aren't snobby enough amirite.

Just picked up a 4 pack of Old Rasputin Russian (brewed in Cali lol) Imperial Stout tonight. 9% abv pretty good taste imo!

Was looking to try the Vertical Epic but didn't see it there.

Russian Imperial is a style of stout with high ABV. It comes from when the Brits sent stouts to the Czars but needed them to stay the journey. Same story as IPA's. That said Old Rasputin is excellent.

Belhaven's Wee Heavy. If you aren't drinking Scotch Ales you best start. Dirty Bastard also great in this style.

wow this has a sick high rating on beeradvocate, my local store carries a bunch of Founders brews will look for it this week

anyone tried La Folie? picked one up will be having it tomorrow during the super bowl, its sounds really good and i'm a fan of sours and the New Belgium Lips of Faith series has some really good brews so i don't think i'll be disappointed

Gl with that. It's extremely limited in bottles, Michigan gets the lions share of them too. IIRC bottle release was late summer and I'd feel pretty confident saying try next year. Pick up some breakfast stout tho

Tried a couple of new brews:
Adelbert's Scratchin' Hippo Belgian Style Ale - An okay beer, nothing to write home about, but probably worth a second try. It is a brand-new brewery and I got some of this with their first-run batch that hit the stores locally and I am interested to see where this brewery goes.
Boulevard Chocolate Ale - I was actually pretty unimpressed with this brew despite its stately reputation. It was FAR too sweet for my taste and not all that well balanced. It isn't a complete stinker, but I am NOT going to give it a second chance.

when i found out what IPA stood for i laughed pretty hard that the only ones i'd had were brewed in california or oregon. still haven't had one from india actually.

Don't bother, you won't find any CBS on shelves. It is one of the most anticipated beer releases of the year and it sells out almost immediately everywhere.

I do suggest the regular Breakfast Stout though, very tasty and reasonably priced, even if it's not quite on the same level as CBS.
