I imagine vegetarian chili would be pretty good if you stuck to the principles of chili and just omitted the meat. The addition of beef provides not only tasty chunks of meat, but permeates the entire dish with a beef flavor. Adding fake meat doesn't accomplish either of those things, and you've already got plenty of protein from the beans.
How do you have a chili recipe with no ACTUAL PEPPERS? There are differences of opinion as to whether or not you should add beans, but every chili recipe worth its salt calls for real peppers. You will get way more flavor if you use chili peppers instead of chili powder. Add in some bell peppers and whatever assorted hot peppers (jalapeno, habanero, etc) and you got yourself a stew, baby!
Also, sauteeing or roasting the various veg is much preferred to just dumping them in the pot, as you get more flavor (Maillard reaction, etc).
