pizza & pasta are pretty filling. burritos, rotis, curry dishes with rice and/or naan, falafel, veggie burgers, veggie sandwiches/paninis. Plus people just make any number of vegetarian dishes that have beans or tofu prepared lots of different ways, plus veggies, plus rice or quinoa or noodles or whatever carb, plus whatever sauce you want.
Last weekend I had red wine peppercorn gravy poured over pearl onions, seasonal veggies and meatless loaf towered atop potato & leek latkes. On the left of my dish is a veggie quesadilla, and next to that is veggie poutine.
