Yea, I'm considering supplements because I don't like those foods. I am dubious about how much iron actually gets absorbed through supplements though.

Iron shouldnt be a concern with balanced vegetarian diet. You're right that iron supplements are garbage. Buy unsulphured blackstrap molasses and add it to smoothies or just have a few spoonful of it if really concerned.

Going to feel like a school marm for saying this, but why not get a blood test to see if iron or anything is low and/or use cronometer to log your diet for a week to see what the micros look like. If you've been on this diet for 3 weeks your current levels should be a pretty good indicator and the tests are cheap.

I don't feel any symptoms of low iron. I know them well because my sister is severely anemic; she's had to be hospitalized for it.

3 weeks is enough time? sounds right but I don't know the details of that.

Ideally you'd have a "before" but when my wife ran a low test they put her on a supplement and checked again two weeks later (she's not anemic).

I went looking for that gluten flour in my local supermarket and couldn't find it so will have to try another. I did pick up some Kakadu plum and chilli sauce to go with it though. Haven't tried it yet so not sure how good it is. If I like it I'll post a link.

I went to an independent supermarket which would have had 50 different types of flours and it wasn't there. It's either named something completely different here or I need to order it online.

I'm surprised you're finding it so difficult to local gluten flour/wheat gluten. It's not like it's just some exotic vegan fake meat ingredient; gluten flour is an ingredient in most rye breads, so any place with a large baking section should have it. I used to find it in bulk bins in health food stores and pre-packaged in grocery stores, but lately I've only found it pre-packaged in both. It's usually this brand, but there are other brands as well. If you live near any of these places, you should be able to find it.
