True, but the standard expectation is that you tip at a bar. Not necessarily true at a coffee joint.
Also at a bar you get served faster (even ahead of other patrons who have been waiting longer, at the bartenders sole discretion) and may even get a better pour if you tip generously.
At a coffee shop you're waiting in line and nobody behind you is getting served before you do - when its your turn, its your turn.
Now if Im at a place where I sit down and they bring the coffee/pastry out to me, or if I have an especially complex (annoying) order, then of course I have no problem tipping. But thats because its for service beyond simply pouring a coffee I order to take to go.
