I don't think this is universally true. I used to work in a building where an elevator could reverse direction without dinging. Here's what would happen, as I understood it:
* Empty elevator currently on 1st floor
* Two people on the 5th floor call the elevator, one person wants to go up, the other person wants to go down, so both buttons are pressed
* Elevator goes up to 5th floor and will continue to go up, assuming the "up" person pushes a button for a higher floor
* Dumbass "up" person gets in the elevator and realizes he didn't actually want to go up, and then pushes a lower floor button. Because there are no higher floors calling the elevator, elevator goes into down mode.
* Elevator closes the door and goes down, without ever dinging the change in direction. "Down" person, the only non-dumbass in the story, is filled with rage and must now recall the elevator.
Random aside, I used to live in a condo building where double-pressing an already-lit button would turn it off. I feel like that was a pretty optimal feature, but it doesn't seem to be standard.
