Correct answer but just for aesthetics as no real Buffalonian eats ranch with wings but also no true Buffalonian really eats the blue cheese.

I came into this thread to make a cheese is gouda joke, but I legit keep at least 5 varieties of cheese in the fridge at all times. Mainstays are cheddar(several), feta, mozzerella, swiss, and my favorite Camembert (which is not at all Brie).

Provolone has a subtle flavor imho. It's there, not to overpower the sandwich, but to add just a little bit to it.

on a completely related but unrelated note, Rogue Creamery is one of the world's best blue cheese makers. if you can actually find Rogue River Blue for sale I suggest you snap call the purchase. it's the world champion of the 19/20 World Cheese Awards.

$70/lb is rough. If someone likes cheese that much probably economical to make a trip to France or Italy. Can get world class cheese for like 1/5th the price. Eat like a pig for two weeks and bring back as much cheese as you can. A coworker use to bring back like 25 kilos from France. Like a whole disc of Comte cheese. He didn’t mess around.

i just got back from the local market (same place i can buy Cougar Gold). went looking to see if they Rogue River Blue in stock (they didn't), but they did have Rogue's Smoky Blue. it's pretty fantastic. crumbly when you cut into it but super creamy when you eat and the smoke flavor is really subtle. thinking i may have to make burgers tomorrow night.

Much more reasonable and I bet it would make an epic burger. I think I’ll do a blue cheese burger at some point.

harlech horseradish cheddar

any good epoisses, berthaut makes a great one (french soft super stinky amazingly delicious)

affinois (delicious soft Italian cheese)

high plains makes a good aged cheddar

you're right my mistake it is a french cheese.

guess I'm a sucker for french cheese as that and the epoisses are my absolute favorite cheeses but the harlech horseradish cheddar isn't far behind.

if you like horseradish cheddar I almost guarantee it will be your fav.

Normally too expensive but was 2.50$ off for cheese and 1.50$ off for pretzel chips. Love my Hy-Vee ….
