and as a point of clarification, that Beemster Graskass that shroombae posted is nothing like the two year aged gouda that was referenced earlier.
both sold by Beemster, very different cheese.

Dang! I thought my wife was the only one. We went out to dinner last week and the soup of the day was Gouda and Crab. She told me she had never had Gouda and asked me about it. She ordered the soup and it was delicious!

that purple moon cheddar looks very interesting.
our standby cracker is also triscuit, but the thin crisp triangles to allow the toppings to come through. also great with hummus

For some reason, smoked gouda in my area is vastly more popular than regular gouda. Personally, I find 99% of smoked goudas to be too smokey and drown out the actual cheese flavor. Gouda is decent cheese but smoked gouda is bush league nonsense.
