Ever hear of the fancy gourmet grocery store dean and deluca? A childhood/ college best friend of mine (rip) worked there in his early twenties. The place was run by young delinquents in their 20s. My friend was the cheese master. He had to know about all these different kinds of cheese and what went well with what. I cared nothing about it back then and I regret not taking advantage of his knowledge but what 23 year old cares about gourmet cheeses? He was also a huge kleptomaniac. Since the store had little real adult supervision his fridge at home was loaded with dean and deluca goodies. Parties at his place were great.

Luv that grilled cheese on rye myself. Had one yesterday. Funny, the first time I ever ate any real cheese apparently, sent from Switzerland, was like the night the NBA closed down, Covid was just hitting the news big, and I was ignorant about the tendency of very rich cheeses to cause bad indigestion. I had an attack of it a couple hours after eating, like a hot wind blowing through my chest cavity and throat, never felt it before, and thought, "Uh oh. Covid." False alarm. But I knew then how heartburn/indigestion could be mistaken for a heart attack. Forget what kind of cheese it was. The lady in Switzerland kept saying you don't have real cheese in the USA. Not normally a wedge salad guy but their blue cheese dressing is ****ing unreal.

This was a gift from Mom, ordered online, delivered cold/ice pack/insulation.

I've only sampled the 2018 so far, and it was very good, smattering of crystallization going on, smooth/sharp flavor.

I expect each one to be better than the previous.

Quitting smoking was way easier than quitting soda, for me (like, "I haven't been able to yet" hard)

Also, what do you mix your Jack Daniel's with? OJ? Water? Diet (poison!)? Obvious answer is drink better bourbon, ldo, but the bowling alley doesn't carry the good stuff.

when i quit smoking i couldn't sleep and got night sweats for about a week, no longer crave cigarettes ever but occasionally crave soda

got really hooked on soda when living in egypt, it's like their national drink and there's really nothing more satisfying in the world than having a cold coke on a hot egyptian day - would get serious cravings until i had my daily fix

occasionally i'll relapse and give into a craving and then that re-activates it all over again and i'll want it every day again but if i go a good two weeks of ignoring the cravings they disappear until i inevitably slip up and have one and then back to fighting the cravings for about two weeks

as it should be, although i'm ok with soda in cocktails, doesn't seem to jump start the cycle as having the pure unadulterated version

but for reals, soda is evil and a primary cause for the global obesity problems, there have been groups advocating we treat it and tax it like tobacco and alcohol and that'll be my first executive order as president to make sure a bottle of soda is never cheaper than a bottle of water

you're correct they will only get better as the years get older
2018 is only a ~year off from the 24 month commonly sold in stores
my suggestion is to not eat the older ones with a cracker or anything else at the same time. just cut a slab of cheese and enjoy.

I was in Tillamook on Friday. I thought about stopping by their store, but decided against as I flew with nothing but a backpack that had zero room for any goodies. Should have done it anyway in hindsight.

I made a really quick trip to Portland (arrive Thursday night, train some guys on Friday, leave early Saturday). Well, the company I was supposed to train got fired from the project or quit. Something. Anyway, turns out I made the trip for nothing and had a day to kill on Friday. So I decided to check out some of the Oregon coastline. Drove up to Astoria, then down to Tillamook and back to Portland. Really a pretty drive and so diverse. From I5 to Astoria pretty rainforesty. Then the beautiful coastline. Then back through the mountainy area (hilly?) with snow everywhere. Was a really relaxing day and just what I needed to recharge a little.

Edit: I like your first choices, without the pepperettes. I'm sure they're way better, but I've never been much of a slim jim fan. Do like salami though!

This seems pretty cool, a trip to Portland and than the Oregon coast is on my shortlist. To Astoria to reconnect with my friends to try to find some pirate treasure to save our childhood homes. Down to Tilamoook for some excellent dairy products.

sent you a note about the cheese timing. my suggestion is to go ahead and start nibbling on the meats. just like the cheese they are great on their own and don't really need the meat/cheese combo.
i'm curious which of the sausages you'll like best. the chorizo and saucissan sec are the ones i tend to get the most (our local market carries them since they're a portland company). and obviously i ignored your comment about the pepperettes.
