It's quite simple. I used to go to buffets to load up bakers as a fool. Once I worked at a steakhouse it all became obvious and simple.
All you have to do is: scrub your baker, pierce it with a fork or something more sufficient, cover it on all sides w/ olive/peanut/watev oil, sprinkle liberally with kosher/watev salt; bake in oven at anywhere from 350 to 450 and flip (or not) after 15-25 minutes. Total cooking time of 30-50 minutes should be good.
Once it's tender/squishy to the touch you know it's good. Again, all obvious.
The salt pulls the moisture out of the potato plus makes the skin tastier.

After a couple of weeks of this guy/gal wandering the neighborhood, we were unable to find the original owners (no collar, no microchip), but we were able to find him/her a good home. Very glad of that, but will miss the visits.
