I've only seen a handful of people that work for those places, in a small town no less, but it really really seems (at least based on the super small sample) that these jobs generally get picked by people wanting to anything BUT work.
They don't do anything "in store" as in wash dishes, pack food, prep food for the next day, or even make food at all.
Alot of the ones that I'd see driving around were monstrously obese. One guy (who was nice) quit a w-2 job because he had to wash dishes and his belly would get wet from sticking out so much, and ended up back doing one of those door dash type jobs.
Other times when I'm in a nice restaurant getting my crap to go, I'll see door dash and other delivery people waiting around in their pajama pants to go do deliveries.
We're turning into WALL-E folks! Bring me my food to my face right NOW!
