The deal with the 2nd season was that they were guaranteed 7 episodes, and if it did well, they would get a full order for season 3. So this is why it moved along much faster and why the ending gave enough closure to cap the series without leaving any gaping loose ends, but left it open in case it was picked up.
Apparently the original idea was to split up season 2 into three major story arcs. Texas, Cheyenne, and New York, and show essentially the second US civil war. The ending of S2 was just so good I still to this day feel sad sometimes about what they could have done if given another season.
Regarding BSG, use netflix to get the first disc of season 1, which should be the miniseries. It's basically a 3 hour movie. You'll be hooked within 30 minutes, I promise.
