However, when Marty and Jennifer leave 1985 and arrive in the future, they skip over all the intervening years. This film's rule of time travel was explained when Einstein (the dog) traveled one minute into the future early in the film.
Therefore, when Marty and Jennifer arrive in the future, they'll encounter a world in which the two of them simply disappeared in 1985.
They won't be in a world where they got married, had kids, etc. There won't be an older Marty and Jennifer because they vanished without a trace in 1985.
Same ending.
Doc could have just come back and said "Hey Marty. Make a note in your diary that you should make sure your son stays at home of the following date otherwise he'll get arrested. Have a good day."
Or at least not make him rush. I mean Doc says he has to do it quickly? Why? Have a few days/months off, plan it out and then go do it. There's no rush.
