I don't know about that. Jesus Delgado Rodriguez, a biker that was killed that day was a grandfather to 19. He was a Vietnam vet, a purple heart recipient, and a law abiding citizen that didn't even carry a weapon.

What if this was a police inspired action to try and rid themselves of the biker problem?
Its alleged that several undercover officers were present, maybe one tried to instigate the fight and it got out of hand.

It's not that wild of a conspiracy theory. It's par for the course in many police departments to not stop crimes because they don't want to put themselves in danger or in some cases because it will allow them to make an arrest.
People may lol at families being at restaurants like this but anyone who has ever been to one of these restaurants knows that there are families at restaurants like this. Many families. It's incredibly derelict of the police to not make a show of force to prevent the violence from taking place. I'd say you're insane if you think something like this would have gone down with 20+ police there.
