One of the more interesting theories I've heard regarding dancing mania, dragons, vampires, and other phenomena reported in medieval times, is related to psychedelics.

In some areas of Europe, the dewy weather would sometimes cause grains and other crops to mold before harvest. This could lead to a small village's entire population consuming low-grade amounts of psychedelic spores, leading to tall tales that were "confirmed" by other villagers. Anyone who's experimented with psychs will know how easily the power of persuasion can lead one to see or experience things that are not actually there.
