Just thickens it and adds a bit of sweetness/flavour.

I prefer a more ketchupy consistency than watery. I generally use a bit of starchy fruit or veg - carrot, apple, etc

Salmon sounds like a good call I wouldn't have thought about.

Recently tried Secret Aardvark and Dirty Dick's. I believe both of them have gotten popular because of that Hot Ones show on Youtube. Both are among the top sellers on Amazon.

Secret Aardvark is terrific. I use it mostly on eggs, but it's pretty versatile. Has a tomatoey, slightly sweet taste. Very well balanced. Medium heat. This one I will buy again for sure.

Dirty Dick's is also great, though sweeter with a tropical/caribbean taste. Strong flavor, so I prefer it on something like chicken. Medium heat. Would recommend if you like fruity hot sauces.

I thought if it because it would seem similar in concept to honey-mustard, which makes for a tasty salmon glaze.

Another use for spicy maple syrup, chicken and waffles.

Garick: thanks for the yucateco chipotle rec, I’ll give it a try.

Jake: I got aardvark a while back and thought it was fine but not great. Dunno what it is exactly, just don’t think it has really great flavor. Just got the dick’s based on your rec and it’s great. A little too sweet, but still delicious with great flavor and heat. It’s sort of in the middle of my current favorite sauce (humboldt hot sauce island style) and least favorite (bee sting - cloyingly sweet). Just ordered a humboldt mango habanero, never tried before and sounds great.

Here’s my current hot sauce (not including Asian chili sauces) lineup from favorite to least favorite:

I’m gonna use up the last two as marinades, I think they might work well for that.

Aardvark changed their recipe a couple/few years ago and it's been hot garbage ever since. It used to be really good but I haven't had it for a couple years so I can't really remember what changed.

Hot sauce fans,

Got the humboldt mango habanero. It’s not bad, but nowhere near as good as their island sauce. Very habanero forward, not nearly as balanced or flavorful. Still a good hot sauce tho.

Garick - every regular store around here seems to have yucateco red and green, but no chipotle. Keeping my eyes open for it tho... I’ll swing by the Mexican grocery soon, maybe I’ll have better luck there.

Yeah, I've only ever found it at Mexican groceries, and not always there. I order it online by the case now, so I never have to go searching for it.

Hot sauce lovers,

Some additions since last time:

Marie sharps mango habanero is great, big fruit flavor tho not a ton of complexity. Medium heat.

Marie sharps Belize heat. Pretty hot, pretty good flavor but not amazing.

Valentina. Very good rich flavor, not very hot.

El yucateco xtra hot is hot as ****. Pretty good flavor, but damn is that hot.

El yucateco black is super smoky and charred, not very hot. Not bad, but a little overboard on the smoke here.

Impressive collection El D. I might have to take a picture of all mine. The only ones we have in common are the tabascos

Rexx,

I don’t even use hot sauce that much. Mainly with eggs. But with many of these $2-3 and expensive ones in the $8-12 range, it’s very affordable to explore. I’ll probably give away most of these.

I’ve been largely working through this list https://www.seriouseats.com/2017/02/...li-pepper.html plus recommendations ITT.

Amazon is a pretty good source, but this site has a next level selection: https://heathotsauce.com. Unfortunately, international shipping prices suck. For US people, the hot sauce of the month club looks good too.

27,

I’m gonna have a hot sauce party and people can just take whatever they like that doesn’t have a franchise tag on it!

NHSL rules only allow 1 franchise tag per year, so you're gonna have to give everything besides Humboldt away, sorry! I'll take the Palo Alto Firefighters and/or Marie Sharps, TIA!

Just got the Peri-Peri sauce on that list tonight randomly, mainly because some food show had someone cooking South African food.

Decent flavor, but too much citrus for me. Should be good on a salad though, will give it another go soon.

A story inspired by this thread: A few years ago I saw some Red Hot Xtra Hot sauce and gave it a try. Thought it was fantastic. Had a lot of heat, where I could gargle with normal Red Hot.

Then it disappeared from the shelves. Everywhere. I then began to use this version of Red Hot, which is somewhere in the middle of the other two:

A year or so ago I did an online search for Xtra Hot and it just wasn't around anywhere, even Amazon. Then this thread piqued my interest again in the last couple weeks so I went online again and found it on Amazon. Ordered one(8.99 lol) and it came a couple days later. It seems to be semi-available in stores, but for some reason is very regional.

Anyway, I highly recommend it as it has a LEGIT kick to it.

I feel like I've definitely seen that stuff in stores.

Picked up a bottle of the El Yucateco Xtra Hot. I'm still a huge fan of Valentina Extra Hot but it's, uh, not real hot.

Haha got a bottle of it in the cupboard. I didn't even know it existed until ~6 months ago and saw it in my local convenient store - haven't turned back since!

Also, I'm sure that most of the enthusiasts would have seen or heard about it already, but if not you should check out the hot ones series on YouTube. Some legitimately hilarious interviews on there

Bored BUMP

Just received these bad boys. I've had them before and they're great. I'm not usually a fan of buying hot sauces, as I can make my own for a fraction of the price, but this stuff is 99% chilli puree (1% salt and ascorbic acid, stop it going brown or off). Burn any corona out my system!
