Guerrero corn torts are a staple here and it has nothing to do with gluten...they're very good.

If you like cider, that's a good gluten free substitute. I personally don't like cider and don't think it is a good substitute for beer.

Bitburger has a gluten free lager that's not worse than most US light beers.

I'm not a big fan of cider.


Also... to say that meatballs or meatloaf isn't good is simply missing some simple substitutions for some of Kenji's recipes.

Let me rephrase, as a couple of you are missing my point entirely when I said that meatballs and meatloaf having gluten. MOST meatballs and meatloaf have gluten. If you are going to a diner and want a piece of meatloaf, it has gluten. If you are going to Carraba's, which has one of the rare gluten free pastas, the meatballs have gluten.

You can make almost anything you want in your own home without gluten. If you are like me and like to eat out, a lot of the staples that you are used to are now off limits.

I suppose you are right: the thread title does ask for recipes, though the body of his post is a more general Celiac's Disease post. If you are cooking at home, I don't think maintaining a gluten free diet is the end of the world. There are plenty of gluten free flour replacements at most grocery stores. If you are not cooking everything from scratch, it is a challenge and I will defer to the thread.

I don't think I'm right and I admittedly don't order Chinese or go to Hibachi. There is a local steakhouse that is very gluten friendly and their bread crumbles when all they need to do is toast it.


I was more reacting to what I thought was you acting like this is a death sentence. Yes, maybe it's more expensive and is not like what you think food should taste like, but you actually eat and feel better... I'm not sure what price that is worth.


It's always easier if you have good GF restaurants and bakeries in the area... and I know I take that for granted.

Thanks for all comments. Sorry, lost track of thread when I had a crappy work stretch followed by a trip to Disney. Disney is amazingly gluten friendly. I walked 142k steps from Monday morning til midnight in my time zone. Went to a grocery store first day and got some gf wraps, lunch meat, PB, almonds and jerky. Also picked up some bud light black cherry seltzer

I obv need to try Guerrero. Mission are good, but got to make sure they are pliable w zero cracks. Also wrapping in paper towel w a little water and microwaving for 10-15 sec makes them much more compliant for wraps

Black cherry I can deal with. Vodka/water w citrus is pretty legit too. Can still drink whiskeys, but I’m gonna have to find an ol fashion alternative

It just takes a lot of prep, but that’s gonna be part of it

I feel better already and it’s been 2 weeks. My sister said she kept feeling better first 6 weeks

Yes. I also made the meatballs for an Eagles game with friends who are not GF and have been asked to do it again. Only the outside of the bread in the pic being burned should be a dead giveaway that it's GF. Obviously they can use their own rolls.


The mission wraps don't need to be microwaved as they are delicate, IMO. Again, I'd recommend toasting them.

Working again tonight and the Schar ciabatta rolls are a godsend

They taste semi close to a roll, or I’ve forgotten what a roll tastes like. Been a reasonable night and after looking at cookbooks to buy, I perused the webs for recipes and have a new note section on my phone

If a mod sees this can thread title be changed to “living gluten free” or something similar. I tried to find way to edit title on mobile and can’t find it. The help outside recipes has been much appreciated and hopefully more recipes are on the way, which have been quite lacking thus far ����*♂️. I’ll post some once I try them, but I’m still in intro mode at this point tbh

I do appreciate all comments and that meatball recipe would be awesome to add if you don’t mind sharing Randall

The ciabatta rolls aren't bad, but I still think Schar bread is way too dense overall.


Most meatball recipes are easy to replicate. I like Kenji's (I know that 27o has posted a recipe, but I haven't tried it yet). I will say that because GF bread doesn't crumble easily, I use panko. The consistency with the buttermilk is still odd, but it's a lot easier and I don't think there is a downside. I imagine fresh bread is ideal, but it's still good.
