There is no nutritional difference. But to argue that you aren't lowering the quality is absurd. If you freeze a veggie and turn it into soggy mush, is that okay?

Be honest with yourself when you make suggestions. Also, GLHF trying to buy frozen higher quality meats. Suggestions like "Eat a lot of chicken thighs" are also lol as many people consider thighs a rather worthless piece of meat. Like a hangar steak or a flank steak. Sure with skillful preparation anyone can makes these delicious, but acting like using higher quality ingredients wouldn't improve the quality of dining is ****ing ******ed.

The real issue is that people are acting like frozen meat isn't a downgrade in quality when it certainly is. Next up: "A car is a means of transportation: Honda Fit = DBS"

but in all seriousness the fresh/frozen thing is so blown out of proportions its not even funny. Seriously...you sound like me a few years ago. Texture...maybe, if you dont thaw it right. Taste...i'll give you that, but most people cant taste the difference and it takes a pretty developed palette to taste it anyways.

its mainly that the meat sometimes is a little tougher and the taste is a more subdued. Its hard to explain but if you have a good palette and try one then the other you'll taste the difference.

the fact is though we're talking about home cooking and the ratio of quality vs. price. Saying that frozen meat is drastically lower in quality to the point that one should feel some sort of shame or whatever for buying frozen meats or freezing your own is prudish imo.

I will concede that veggies dtrastically lose their nutrients, flavor and texture when frozen. Frozen fruit imo is pointless unless its getting blended.

I adamantly disagree....thighs are my favorite parts of the chicken and flank is my favorite cut of steak. Quality of ingredient is in the eyes of the diner...not an inherent truth.



..and fwiw i usually never buy anything frozen...but i freeze fresh meats i cant get to within 3 days or so all the time.

Nice strawman. But this isn't the case at all. It is more like: "Not understanding the difference in quality between frozen and fresh foods is indicative of a fundamental lack of understanding in what makes food taste good."

Its not shame. Its an understanding of wtf you're eating and the quality behind it. IE I can't get fresh herbs now. I don't cry about it. But I understand my food would be better if I had fresh herbs. They also cost more as I don't need a giant plant of basil. I need like 4 leaves and I can't buy 4 leaves alone.

i'm mainly commenting on how ppl seem to think buying frozen meat/refreezing fresh meat is some travesty when the thread started as suggestions for saving money. i understand it tastes different but you can't have your gourmet cake and eat it too. and frankly it just pisses me off to see people showing a complete lack of respect for people that prefer to spend their money on things besides food. if you guys had to match my diet you would all seriously kill yourselves because i eat pretty ****ty food because i just don't care. i guess i wouldn't fit in well at your cocktail parties, although i would eat your fancy food if it was in front of me.

I'll quote my textbook if you want. Its the only proof ive got. I dont know how you'd really test that outside a lab or something. all i know is that the text said extreme cold, extreme heat and overcooking will leach nutrients from veggies. Actually if we're being nits veggies begin losing their nutriets the moment they are picked/killed as all veggies out of the ground are technically in the process of rotting.

Basically. I'm unaware of any research that points to significant differences in micronutrition of organic/variable freshness veggies. I agree with your general idea though. However, I'd be hesitant to actually care of about a microscopic level of micronutrition difference between a store bought green bean, a frozen green bean, and a green bean from my garden. I'm even ignorant as to whether climatic effects can alter the micronuttritional composition of vegetables (I would assume so).

I didn't go to a culinary school. I read some e-books.

Your idea of common ground is entirely absurd. You're trying to make some half-assed argument that you could make a better tasting meal than someone else with inferior quality foods due to training. This is ******ed. The question is whether you could make a better quality meal with better ingredients holding all other variables constant (ceteris parabis). I will not equivocate on fundamentally ******ed arguments since it would be unfair to people who would actually prefer to not be misled into stupidity.

But suit yourself. I'm glad you paid someone to teach you to make food, yet you still don't know **** about nutrition. Congrats.

I understand what you are saying. So no real nutritional difference, one just tastes better. I won't disagree with that and now I know why you say its higher quality.
