I know I'm late to this, but honestly, just gobble up as many big sign-up bonuses as you can. Rinse and repeat every ~6 months. You get so much more value from that than worrying about a % or two on this or that category. That said, when it's close, target cards that will reward you the most when you default to them (read: the time between app sprees, when you're not clearing bonuses.) There are multiple 2% everything cards. There are multiple cards that reward more than that on various categories like gas, groceries, travel, utilities, etc.
A couple of good resources to see what the best current offers are would be r/churning and doctorofcredit.
