take about a tablespoon of oil (any kind, cheap is fine) and about 1 - 2 tablespoons of salt (larger grain is better but any kind works), and scrub it with a papertowel. the papertowel will get black. rinse with water, and repeat if needed. when you're finished dry it off.

Got some prime filets at Costco yesterday, about 1.75'' thick some nice marbling for a filet.




My new standard when I have the time is the oven reverse sear, which allows for better temperature control. Oven at 200F until 110F internal temperature, then rested for ~15 minutes and seared for 1.5 minutes. I'd like to shorten the searing time but I don't get a good crust otherwise, I guess my gas stove kinda sucks. After searing:



Served with potatoes, brussel sprouts, and a sidecar.



The meat was extremely tender and nicely cooked throughout. I'd like to minimize the grey band a bit but I'm pretty happy with the results as they are.

ElD, I've always made it when doing steak for two and split it between both and it was still quite rich and filling. Eating the entire portion on a single a steak would be.... impressive.

^I'm sure I eat a lot but I could kill your average steak pretty easily and I doubt that it's an uncommon thing.

I assumed the recipe was for 2 steaks, so I cut it in half for 1 and I think I was right. And even still, there was maybe even too much for just 1. I think the full recipe could serve 2-4 steaks and a half recipe could serve 1-2. (where the low end numbers are if you are using the sauce as a full topping, and the high end if you are using it more as a side for light dipping)

Made this today, pretty satisfied considering it's my first time cooking (pork) tenderloin and considering the tools I have to work with. 100% stovetop FWIW
Def need slightly lower cooking time + higher heat next time and gotta find a large pan to press down on the meat

in my language, the equivalent word of steak is usually used next to the time of animal, so you can have "steak of beef" or "steak of pork"

Technically steak can be a cut of lots of different meat but in the US it's pretty much exclusively used for beef.
