Steak fans,

I almost always go medium rare (had a rare steak at a steakhouse a few years ago, don't totally remember what I thought), but people talk about loving rare steaks so much I decided to give it a shot the other night w/ a delicious ribeye.

Also, we haven't had any pics here recently...

So I cooked it up with some potatoes and onions. OH NO DID I COOK IT TOO MUCH?



Of course not! Perfectly rare (red and just barely warm in middle, but not bloody)

It was v v tender and delicious and I really enjoyed the steak, but I def prefer it cooked a little more and a little warmer inside, so gonna stick w/ medium rare as my standard.

Diablo, that looks almost perfect. I would say that looks to be one or two degrees below rare. When I was young I used to eat steaks medium or medium well. When I moved out for the first time, I went to whole foods and bought a porterhouse. I never cooked a steak before, so I did what I saw on a youtube video. When I cut into it, I saw that it was definitely rare. I took a bite and now every time I cook a steak I basically try to relive that experience. I think that's why people like us treat steak reverentially. We all have a fond memory of the first time we ate a proper steak. *tear*

Also, your side dish looks good. By the look of the onions, I'm guessing that's oven roasted. Care to share the recipe?

Diablo - awesome pics. While, like you, I would probably like it cooked just a little bit more, it's still very good eats and I'll step over anyone to get my hands on one.

My rule of thumb: Good steakhouses or cooking myself - medium rare. Places I don't trust on how they cook a steak - get something else.

I've gotten to the point where I just order them rare when I go out, even though I like them medium rare. Most places give me medium when I order medium-rare, and yes, that includes high end steakhouses.

Thanks! Your steak story made me want to go out and get another steak ASAP!

That side dish is my standard steak-at-home side and is about as simple as it gets.

Cut up potatoes. Cut up onions. Some olive oil and butter in a pan at medium/medium high. Toss the potatoes in, salt and pepper. Cook til they start to brown a little (~10-15 min), then toss the onions in (optional: add a little more oil/butter). Cook another 15 min or so. I usually cook a little longer than this and turn the heat up a bit at the end because I like it all pretty browned w/ some crispy bits. I also usually toss in some chopped up garlic towards the end.

True.

I had to send a steak back recently, asked for medium rare and it was pretty much well done.

I find ribeyes, for whatever reason, are better medium rare than rare. To me they are little too chewy when rare. Striploins/sirloins/filets though are great rare.

Maybe it has something to do with the fat content?

Added some grated cheddar cheese to my fillet just to see how it was, I really liked it.



Had this just before football, was really nice and light coupled with some nice salad.

That picture haunts me every time I open the fall cooking thread. I am just waiting for the next page to come so my eyes can recover from the steak covered in melted cheddar cheese.

I'd say that's probably about it, and it's usually in some sort of butter, sauce or crust.

Lol so its awesome on a burger but banned from a steak?

Had nothing to make a sauce, was bored of mustard so thought id try some nice cheese, it tasted feking awesome.

It wasnt that plastic cheese you yanks eat fwiw.

Seriously, mustard? That's what's on that plate, huh? Plus, that's not a nice salad. That's lettuce. Under the steak. I think you did make a really good burger. Without buns.

+1 WTF at the puddle yellow mustard on your plate? I think putting your steak on top of your salad will just wilt your greens.

lol...me too.


dont get the hate though, philly cheese steak sandwiches (with cheez wiz) are awesome. Steak sandwiches on cheese garlic bread are awesome..cant be too much of a diff, its not like he is doing this with super premium dry aged beef or something like that

TBH, I don't find mustard any more objectionable than marinating a good steak. And imo if you're gonna sauce a steak, a filet is OK for that.

He disrespected the beef man. Steak is steak, you don't put condiments on it. If you knew how uptight people are about philly cheese steaks, you wouldn't use it as an example.
