I bought a ribeye the other day and didn't notice until this morning that it has a use by date of yesterday the 11th. I know it's fine to eat today but will it be okay tomorrow? It just suits me better to have it then.

Use your eyes and smell the god damn meat. It's meat. It won't randomly sneak being bad on you. It will be very noticeable.

Exactly, we are programmed to be able to detect when meat has gone bad. Smell is most important. Get your nose in there, and if it smells unpleasant at all you can discard it.

Spoiled meats tend to smell sour, or ammonia-like (especially noticeable in chicken).

bacteria growth is exponentional, and takes much less than 24 hours to double (maybe 1 hour?). So its not so ridiculous. Having said that ill put money on the steak being fine to eat

these use by dates clearly have a large safety margin built in, and i doubt they're an exact science. so i do maintain it is ridiculous to definitively state 'i know it will be fine to eat today, but what about tomorrow?' with no other information.

so yeah, in conclusion, look at and smell the steak. and then eat it unless it genuinely horrifies you.

A quick note on spoilage.

Most dates you see on your food are 'best by' or 'sell by' dates, which are when you as a consumer should still feel comfortable buying the product. They are not indicators of the deadline to eat the food, and passing that date does not involve spontaneous growth of super-amazing biological toxins which will reduce you to a huddled mass of humanity, erupting from both ends. Rather, the food producers are expecting the product to sit in your fridge for a while after the stated date. Any product with a 'best by' or 'sell by' date, if properly handled in your home, should continue to be fine for a week or two depending on the product. Steak wrapped in cling film and kept chilled should last quite a while. Some items, including yogurt and cheese, can last way longer than the stated date.

Oh, and one more thing - the bacteria that makes you sick? It does not always look or smell bad, thus sight and smell are poor indicators of food spoilage. Buy product from folks that keep it properly, transport it to your home quickly (if you can't get a small cooler and keep it in your trunk), and get it refrigerated as soon as possible. If you look after your product, and eat it in a timely manner, you will be just fine.

Also, just because it's within the "best by" date doesn't necessarily mean it's fine to eat. A couple of times I've bought meat from one of my local supermarkets and it was bad already and inedible even that night. If I were a less lazy man i'd have gone back and said something but now I just go elsewhere for my meat.

Very good point. At some time along the way, your food was improperly stored. I would be nervous about purchasing product from this place in the future, and would be on the lookout for things that would support my idea that this place is probably quite sloppy with respect to proper food handling.

Of course, it is KD, it is distinctly possible that when I bought it (a case at Costco) back in about 2002 it had a 10 year shelf life.
