Preview for tomorrow. A whole prime grade 7 rib roast from Costco. Cut into single rib steaks and a 3 rib (loin end) roast for tomorrow. Made an ad hoc rub of Kosher Salt, black pepper, Lawry’s, onion powder, garlic powder, paprika, ancho and chipotle chili powders, and brown sugar. Will smoke tomorrow at very low temp (under 200) to 130 and then finish in a screaming hot oven.
