Really basic: Rotel tomato/green chili, chopped onion & garlic, S&P, cumin, hot paprika, chili powder, garlic powder, onion powder.

Thatís an insta-send back.

Ask for Medium Rare plus next time. They wonít try to pass off rare that way (theyíd rather under vs. over cook a steak.

was at a steakhouse in texas of all places and was surprised they had a chart with photos of the level of doneness with corresponding numbers

i asked why they did this and the waiter said that it was for two reasons

1. everyone has different definitions of what x level of doneness should look like
2. there's social stigma attached to it, someone who wants it well done will be worried about asking for well done so they'll say medium well and kind of hint they actually mean well done but don't want to say it, likewise you get people ordering rare who genuinely would prefer medium rare etc etc so when people say 4 or 8 it feels neutral and they get exactly what they want

that's also how they do it in asia, by numbers 1-10 with 1 being basically uncooked and 10 being hockey puck

That's a clever way of doing it if the chef can actually execute on it. In my experience, they rarely can.
