IBD that’s a little nicer than “not bad.” As others have said, elite as always.

i mean, i want to crush that pig?

when did this thread stop being hyper critical?

ibd, great doneness, minimal grey band and greaat for the grill, crust needs some work. Still looks better than the majority of steak houses

Home-aged prime bone in ribeye. Oven reverse sear finished in beef fat and butter. Killer crust.

I mean I love the look, but isn't that a 'little' too rare for a rib?

(please don't kill me)

Close on rareness but I really like that sear.

FWIW I think this was a lighting issue, as the whole steak was at least 130. Was really happy with the results.

Also, PSA that I got from Mrs. Dvo:

I don't consider a $13 bone in ribeye a great enough discount that warrants advertising, especially not from a big box store.

It’s prime.

I dig, but is that really that much cheaper than a high quality grocery store? And does it warrant advertising?

That’s about normal price for bone in prime ribeye at the main grocery store chain in Houston. Sale price is $9.99.

I think you both are underestimating how good we have it in TX interms of beef prices.

Seems mostly better steak cuts/grades. I think ground beef, lower end steak cuts, roast type cuts and certainly brisket aren’t cheaper.

I would expect Midwest would be cheapest as that’s where most beef comes from.

Brisket is cheap as **** at HEB and Costco compared to what I'm dealing with in norther california. $3lb/ vs $8lb. imo

Northern CA is an outlier same as Texas in the opposite direction.

I can’t think of any supermarkets that carry prime in Michigan, but if you get it at a butcher/high end market you’re looking at $25 a lb. I think Costco is usually 18-20$ but my Costco meat selection stinks so I don’t buy meat there often and could be wrong on that price.

Costo prime around here is really good quality. $13/lb may not be the greatest deal, but I'd happily take it.

I live near Philly. Not so great prime from a chain store is $15/lb. Good prime from a high end local market is $25/lb.

Same here in Chicago. I live right by one of the more famous/popular local markets and it's $25-$30/pound. On a great day, Costco prime looks borderline wagyu with the marbling. Obv not the case, but still really impressive for the price.
