unfortunately he can't compete with the better steaks in this thread.

a few thoughts:

he refers to the steaks as being about "1 inch or more" thick, when they are probably 2 inches.

he takes two temperature readings, but doesn't show us the temp.

no pic of interior!

You guys rang? I have no defense for that video. None at all. But if we all promise to ignore it, I wouldn't mind doing another contest. Except we have dry-aged Wagyu now ... so that seems like a pretty good prize for a winner.

Ahem. I believe I mentioned that my only request on this deal was that we never speak of this alleged video again.

(We actually retired this one awhile ago because of qualities you guys JUST HAD to accurately point out, so I was disappointed it ended up in a YouTube feed.)

I’m going to have to try a smoked steak. Does it change the texture at all?

With current thread levels I think the winner will probably sousvide in a hot spring, chill in liquid nitrogen, and crust up with a jet engine.
