Econ,

How often were you flipping? Butter or oil? Other than that puke-inducing section, pretty impressive crust/gray band/doneness combo for a thin steak. I always chicken out and don’t get that good a sear on thin steaks.

flipped every minute except for the last minute, which was 30 seconds each side. cooked in oil, but adding some butter at the end might have helped touch up the sear.

So my buddy/Team Pan protege sent me these pics tonight. Said 1-min flips in butter and finished with an oil/butter sear. I think the results speak for themselves:

Mediocre selection at the store today, but was really craving a ribeye for dinner. Selection was a 6/10 (for price).

Crust was excellent, cook was a little uneven but barely any grey band. Very tasty with asparagus and garlic mashed potatoes.

The dogs approved

Thank you - no I just cut and took a photo

When I sliced everything i found one small slice towards one end that was a little closer to medium on half of it and medium rare on the other side. I’m guessing it was caused by the pressure I put on the steak when pushing a cast iron onto the steak during one of the sears?

I had some <1" thick #LOLchoice that I only wanted half of since I had a late lunch. Super high heat, ~90seconds each side with a dome on top of the steak in my cast iron grill pan. After a 5minute rest. It came out really tasty. Nothing like the amazing steaks in this thread, but I was satisfied with the end result.

Agreed, I watched it without the sound, did he purchase it butterflied or did it himself? It was purchased like that, why?

It is a cast iron pan - it just has raised grill ridges. I have one, too, and I don't know why. Definitely not a good idea to use with steak.
