I was under the impression not only is it ok but preferred? Reasoning being you can prolong pan time getting it to temp?

That's still a pretty strong effort, marginal GB and all.

That's pretty elite. Grey band hysteria has gotten out of control! That's probably top 5 best cooked steaks of everyone you know. Nice work.

Econ,

Now you're just getting ridiculous with your self-critique. A month ago you could barely cook a steak worth serving at Denny's!

Yeah I guess the GB isn't that bad. It's just a thinner cut so it looks bigger in proportion. But I would say it's still above Denny's standards. Probably could pass muster at TGIF

Econ,

When mine come out like that i do a fist pump.

Yes its not a top 10 itt, but we all have had worse from a legit restaurant.

here's the most important part, how did it taste?

I'm more interested in where you are finding ribeye with that much cap.

not gonna lie, it was pretty tasty.

the ribeye was a prime cut from fairway, which only has stores in greater nyc. they have a consistently impressively selection, but their prices aren't cheap. i think that one was $29/lb. on most nights it's better just to go to whole foods.

I'm a huge fan of rib-eye. My favorite cut. Publix has great meat, and they put rib-eyes on sale every few weeks for $10/lb for boneless. They will cut to size, so i get 2-inch thick cuts and stock up.

Scotch pairing:

Looks like it came out a little too done but tastes amazing.

Didn't use a thermometer- may be time to finally bite the bullet and buy one.
