congrats on being able to bring up to temp in an oven with a thermometer and get a quick sear in a pan, probably the easiest way imaginable to cook a steak

While you were cooking each side, were you basting the other side? If not, that definitely helps a lot.

i think you'll be glad that you did, i cant imagine going out and shelling out hundos+ for a fancy 827 burner propane grill now that i've been ****ing with charcoal

I've done this technique on a couple different ranges, and right on exact medium level heat has worked well for me.

I remember that El D steak too - pretty sure that is from the "steak of the year" list from a couple years back. The crust is amazing.

I think the pan method is much much harder than anything else and I am completely stumped how El D gets interiors like that in a pan.

No sweat--a fail is fine with an entirely new technique on a really lean cut. The lack of intramuscular fat probably held back browning to a significant degree. I for one am going continue exploring Ducasse variations until I find one that works reliably.

Steak and fight fans,

Killing time during first couple hours cooking some steaks:

1lb ribeye gonna pan cook to a little over medium rare:


8oz filet gonna sous vide to rare at 120:


Steaks turned out pretty good:


And a pound of lemon garlic butter sous vide shrimp:


Good looking plate!:


Also had corn on the cob and a lot of beer and wine.

Tx: wow those look great.

Econ: interior looks very nicely cooked. Always tougher to get a good sear on a strip vs ribeye. And yeah, ribeye usually gonna be a little more flavorful, while the strip can have a little beefier flavor.

Nice spread! I'm sitting here getting ready for this fight with a bag of pretzels, lol. I am enjoying some Night Shift beers, at least, but still jealous.
