Need opinions on this I avoid the butter final sear as even with avocado oil which has the highest smoke temp I still run into issues with burn on my final sear.

I don't care about the "cheating" aspect of it, I just find that super uniform and smooth sous vide texture missing some of the bite you get in a grilled or pan cooked steak, which I really like.

As far as cooking skill goes, I don't think sous vide is really any different from the low and slow oven cooks.

I think it's pretty straightforward on the cooking front. Grilling a great steak takes the most skill, with pan cooking close behind in the skill department.

Legit thought your pic showed you were going to be slicing steak with 2 samurai swords.

I'm not sure with the multiple sears thing (particularly with sears pre and post sous viding) what the best practices are. I would think that the final sear if you're doing multiple sears all post-water is adding flavor and crunch and that you could at that point drop the temp and basically butter baste? Probably someone who has done 100x more steaks than me can answer better.

Real nice! I'm disappointed that we see grilling apparatuses that are not used in the cook. Was hoping to see a 3 grill (or 2 grill and a smoker?) procedure.
