Traveling for work so tonight we ate at the famous Cattleman’s Ranch east of El Paso. I took on the 2 lb Cowboy Porterhouse and emerged victorious. I love my home aged/cooked steaks but this hit the spot. Perfectly cooked and seasoned.



Strip.



Filet.



Victory.

My contribution to science today. 100% deep fried "reverse sear" steak.

First around 5-6 minutes at lowest temperature in deep fryer, internal temperature after resting around 120. Into the freezer for about 5 minutes then "seared" again in deep fryer at 350ish for about 45 seconds.
